Armero has a keen post harvest interest in coffee. The coffee we have here has been fermented for 27 hours post harvest by an Anaerobic process. For those new to this process. Coffees by Anaerobic process boast vibrant flavours due to their additional fermentation period. Allowing the natural flavours within the cherries to be further enhanced. Coffee cherries are placed in sealed containers with little to no oxygen, and then left to ferment for hours. The lack of oxygen causes bacteria and yeast to consume the sugars in the cherries, producing acids and other compounds that change the flavours of the coffee.

PREPARATION
A stand out for us was espresso. The dynamics this coffee has been able to showcase is just outstanding. Super tasty as any black drinking method. Could be a bit funky with milk but maybe you're into that. Either way it's outstanding coffee. Give it up for Mr Adrian Armero Martinez.
